After working as an educator for more than a decade, I decided to make a career change and follow my passion for baking.
It all began with making homemade tortillas in 2019. Then, in 2020, I started baking dinner rolls, which turned out delicious. Fast forward to 2023, when my wife recognized my passion and encouraged me to try baking sourdough. Before long, our I was a proud owner of a Dutch oven and a sourdough starter kit. I quickly learned how to create and keep my own sourdough starter alive. From there, everything took off. I have been baking sourdough bread ever since.
Another passion of mine is history. As I researched my family tree, I learned that my father, who was a farmer in his youth, grew wheat and other grains on communal lands in Mexico.
I also discovered that my great-grandaunt, who was born in 1912, owned a local bakery. It seems that a passion for working with wheat, flour, and water runs in the family.
I aspire to bring back the timeless methods of 19th-century bread making, using only premium flour, water, salt, and my sourdough starter. Inspired by Tartine's philosophy, Every loaf is naturally leavened and slowly fermented overnight before being baked to develop a deep, hearty flavor and a crust that tells the story of true artisan bread.
And as for Ode2bread, the name is inspired by Ode to Bread (Oda al Pan) by Pablo Neruda. It is a beautiful poem that captures the essence of bread and celebrates the artistry of the bread-making process.
